Black Bean Brownies

Black Bean Brownies

Ingredients
  

  • ¼ cup quinoa/oat/ all purpose flour
  • 1 15 oz canned black beans or 1.5 cups of cooked black beans
  • ¼ cup almond or cashew butter
  • 6 tbsp cocao powder
  • 2 tbsp ground flax seed
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 cup coconut sugar(or cane sugar)
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ cup walnuts, chopped
  • 9 walnut halves to decorate

Instructions
 

  • Preheat oven to 350 F. Line a 9 inch or 8 inch square baking dish with parchment paper. Lightly grease pan and paper.
  • 2. In a food processor fitted with the S blade, process the black beans to break them down.
  • Add, the almond butter, cacao powder, flax flour, vanilla, cinnamon, sugar, vinegar, salt and baking soda. Process mixture and scrape down the sides a few times. Add a little bit of water at a time (usually less than ¼ cup) until you have a smooth batter. Gently stir in the chopped walnuts
  • 4. Pour mixture into the prepared pan. Top with the 9 half walnut pieces and bake in oven.
  • Bake for 25-30 depending on the size of the pan you are using. Check at 25 mins and see if it needs more cooking time.
